Alkaline Electric Mock Saltfish Fritters




Aka Stamp and Go

Ingredients:
1. 6 oz oyster mushrooms (marinated in salt water) 
2. 3 Tbsp each Red, yellow, orange peppers, finely chopped
3. 1/2 medium red Onion
4. 1 tsp Cayenne pepper
5. 1 Tbsp plum Tomato puree (optional)
6. 1 tsp Dried thyme
7. 1 tsp Salt 
8. 1 cup Water
9. 1 1/3 cup spelt Flour
10. 1 cup Avocado oil

Method:
1. Slice marinated mushrooms into small strips.
2. Mix salted mushrooms, tomato puree, peppers, onion, cayenne pepper, thyme and salt together in a bowl.
3. Add 1 cup of water to mixture and stir
4. Add flour and mix to make batter
5. Pour oil into frying pan
6. Ladle spoonfuls of the batter into the pan
7. Turn with spatula when the sides are brown and cook for a few minutes until brown every where
8. Repeat 6-7 until batter is all cooked
