Alkaline Electric Quinoa and Peppers




Ingredients:
* 1 cup quinoa (I mixed red and white)
* 1 1/2cups Spring water, seasoned with 1/2 teaspoon salt
* 1/2 cup nut milk
* 1 small red pepper, diced
* 1 small green pepper, diced
* 1 small yellow pepper, diced
* 1/2 onion, sliced
* 1/8 cup (handful) finely chopped fresh recommended herb leaves, chopped
* 1/2 teaspoon cayenne pepper 
* the juice of 1/2 key lime
* salt to taste

Method:
Bring the salted water and nut milk to a boil over high heat, covered.  
Add quinoa, and stir.  
Bring the pot back to a boil, then reduce the heat to low.  
Simmer the quinoa, covered, for 15 minutes.  Toss the peppers, onions, and leafs in a large mixing bowl.  (Optionally add to quinoa if you do not want it raw. I cooked mine)
When the quinoa is done, add it to the mixing bowl, followed by the cayenne, and lime juice.  
Stir well, then season to taste with salt.  Serve hot or cold.
