Alkaline Electric Banana Bread

INGREDIENTS * 5-6 very ripe small bananas, peeled * 1/3 cup walnut oil * 3/4 cup agave (1/2 cup if you would like it less sweet, 1 cup if sweeter) * 1/4 cup irish moss gel * 1/4 cup Perrier water (use less for denser bread) * Pinch of sea salt * 1 3/4 cups of spelt flour or 2 cups if you like it less moist. (Use teff if celiac) * Chopped walnuts (optional) METHOD - Preheat the oven to 175°C (350°F), and grease a 4x8-inch loaf pan with the walnut oil. - In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Stir the walnut oil into the mashed bananas. - Mix in the sea salt. Stir in the agave, and irish moss gel. - Add optional nuts - Make a well in the middle of the batter and gently pour in the Perrier water. Do not mix. - Immediately place flour on top and very gently fold into batter completely - Pour the batter into your prepared loaf pan. (Unleavened flatbread) Ingredients: * 1 1/2 cups spelt flour plus more for rolling * 1/2 teaspoon sea salt * 2 tablespoons grapeseed oil, divided * 1/4 cup plus 1 tablespoon spring water, plus more as needed Method: 1. Combine flour and salt in a large bowl. Add 1 tablespoon oil and mix with your fingers until crumbly. Slowly add water and mix until the dough just comes together. If the dough doesn’t come together easily, mix in up to 2 tablespoons more water. Knead on a lightly floured surface until the dough is smooth and no longer sticks to your fingers, about 2 minutes. Cover with a damp cloth; let rest for at least 15 and up to 30 minutes. 2. Divide the dough into 8 balls and cover with a damp cloth. Lightly flour a rolling pin and a clean work surface. Ingredients: 1. 2kgs (4lbs) spelt flour 2. Mixed herbs (I used thyme, sage, coriander) to taste 3. Salt. Be generous with this. 4. Medium red onion, chopped finely 5. Onion powder 6. 400g (14oz) plum tomatoes 7. Cayenne powder 8. Agave 9. Spring water (for the baking sauce) Method: Start with two 1kg packets of spelt flour. Additional ingredients. You can use any approved ingredients you like, really. Empty flour into large pot or basin Add water to make a VERY stiff dough and let it sit covered for about 30 minutes. It is important to mix the dough thoroughly. Place under drizzling running water and rinse the dough to release ALL the starch. The water will be chalky white. Pour the water off as you go along.
