Ingredients:
1. Oyster mushrooms, chopped
2. Raw spelt seitan (recipe here: http://emahshae-recipes.blogspot.co.uk/2017/12/alkaline-electric-seitan-how-to-make.html)
3. Plum tomatoes (see photos below for rough quantities)
4. Seasonings to taste (I used onion powder, cayenne pepper, salt, sage, coriander, and thyme)
5. Agave nectar
6. Spelt spaghetti
Method:
1. In a large bowl, cut up seitan into bite sized pieces and mix in seasonings
2. Add mushrooms
3. Turn oven on to 200C (390F)
4. Use the seasonings plus a squirt of agave with the tomatoes to make a runny tomato sauce on the stove top
5. Spread mushrooms and seitan into a baking dish
6. Pour on tomato sauce. Should be enough to just cover.
7. Cover with foil (or your favourite covering), and bake for 1 hour
8. Serve over a bed of cooked spelt spaghetti
